Three Beautiful Things 05-01-2023: Memorial for Keith Dahlberg, An Hour to Unwind at Noah's, Another Fun Dinner

1. Keith Dahlberg stated that he wanted the service memorializing his life to be a celebration -- a brisk celebration. This was one of the first things we learned today from Rev. Art Fleming as he opened today's service. Six different people in addition to Rev. Fleming spoke high praise of Dr. Dahlberg's life as a medical doctor, medical missionary, compassionate Baptist, writer, sage, and a husband and father devoted to his family. The service as indeed a celebration of science, faith, commitment, conviction, service to others, and Keith's devotion to his faith and his profession as a medical doctor. Joy Persoon raised the roof with her energetic and joyous singing, augmenting the service's spirit of celebration. 

Following the service, members of the service's host church, Mountain View Congregational,  of Cornerstone Church of Silverton, and the local P.E.O. chapter worked together to present generously stocked tables of food along with water, coffee, and tea. The Fellowship Hall was simply and handsomely decorated and the reception's attendees carried the mood of celebration from the service to this gathering. People were happy to see one another, talked and laughed enthusiastically, and enjoyed the chicken, salads, vegetable trays, desserts, and other delicious offerings at the buffet. 

2. Word began to circulate among us Class of 72ers at the service that Sue Dahlberg would like to relax after the reception with a beer or a drink somewhere. I approached Sue, told her I'd heard this rumor. She confirmed it. Together, we concluded that Noah's would be a good spot to get our classmates together and help Sue unwind and have some fun.

That's what we did. 

We sat around a table for about an hour. I enjoyed a couple glasses of Ninkasi's Crisp Lager and joined in the upbeat mood at the table and in our efforts to support Sue with some mirthful time after all the strain she's been under as her father's life came to an end. 

3. Back home, I got to work fixing a fun and very delicious HelloFresh dinner called Street Cart-Style Turkey Bowls with Yellow Rice, White Sauce, and Pitas. 

All I had to do was chop up a couple of scallions, but the white parts in heated up olive oil, cook them for a minute and then add ground turkey and Shawarma Spice Blend. Once cooked, I added chicken stock concentrate and some water to the ground turkey. 

I had already begun cooking a small batch of basmati rice seasoned with turmeric. Once cooked, I added a packet of almond slivers and some green scallion parts to the rice. 

I also made a quick white sauce with mayonnaise, sour cream, garlic powder, and a little water.

I had already diced a cucumber. 

I put rice in the bottom of two bowls. Next I added, separate from each other, diced cucumber and the ground turkey. Hot sauce went on top of the bowls' content and then white sauce.

I squeezed lemon juice over the top of both bowls.

I heated up two rounds of pita bread, buttered them, cut them in fourths, and served them with the turkey bowl.

Everything about this meal was awesome. The flavors were superb and the different textures very pleasing to my mouth.
